French Toast - Inn Style
prepared at
The Inn at Rocky Hill

(We make our Sauces first before preparing the bread slices)

3 eggs
French Bread -
  cut into 3/4 inch slices
2 T Butter

In a bowl, beat eggs.  Dip bread slices in mixture.  Brown both sides on griddle in butter.  Top with Vanilla and Berry Sauce (below)

Vanilla Sauce:
1 T All-purpose flour
4 egg yolks
1 T vanilla extract
2 c. whipping cream
1/2 c. sugar
2 scoops vanilla ice cream

In a bowl, combine flour, egg yolks and vanilla; set aside.  In a saucepan over med-high heat, bring the cream and sugar to a boil: remove from heat.

Stir in small amounts of hot cream into egg yolk mixture; return all to the pan, stirring constantly.  Bring to a gentile boil; cook and stir for 2 minutes.  Remove from the heat; stir in ice cream until melted. Set aside.

Berry Sauce:  2 cups unsweetened raspberries; 2 tablespoons sugar.  Combine above ingredients in a saucepan.  Simmer uncovered for 2-3 minutes.  Remove from heat and set aside.
